Growing Galesburg, is a project founded by a Knox College course, which will facilitate the development of community around a sustainable food system in Galesburg, Illinois. The sustainable food system will enhance communication between Galesburg Farmer’s Market Vendors, community members, local businesses, Knox College, eaters, local schools, and city officials to create a healthy and thriving food system for the present and future. Through our efforts, we aim to inspire a Galesburg where people are proud to say “our culture is agriculture.”
